Chicken Snacks for the Recession

    Yes, I've mentioned the "R" word.

    So, at the weekend I bought 10 chicken fillets for €10 in my local butchers.

    What quick meals can I make for after training in the evening so that I can fill up on my protein?

    On Sunday evening, I threw together, 1 chicken fillet, some diced peppers and sweet & sour sauce with boiled rice.

    What do you make out of your "cheap" chicken?

    The last week I have been getting gram flour (sort of chickpea flour, VERY low GI, you get it in asian supermarkets).

    I cut the chicken into very small cubes and rub the flour in mixed with chilli powder. Then leave it 20mins and it soaks up more flour. Then fry in a little sesame or veg oil until brown. Now put in about 50ml of water and cover the pan, I actually fry in saucepans to stop the spattering. The steam cooks it through and keeps it moist.

    Then I take the lid off and let the excess water boil off, stick in some garlic towards the end. As a PWO meal I would add in some noodles.

    I have about 14 fillets left and must cook them and freeze them before they go off. I find it better to cook and freeze, since I do not have to worry about cooking through from frozen.

    I get them 10 for 10 in the butcher opposite sallynoggin church, I checked his pack this time and it was 130-150g, my last batches of 10 and 20 were weighing ~1450g and ~2850g, so very good price. No freerange ones that I could see though.

    For ethical reasons I will only buy free range chicken which turns out to be quite pricey!

    I eat very simply, so I'll normally marinate some chicken breasts in lemon juice (squeezed lemons) over night and then cook around four of them together to do me for one day. I eat one veg (generally brocolli) and wholegrain rice or cous cous with them.

    For cheap snacks I eat cottage cheese and tuna.

    You could fry it in some peanut oil then add some salsa and peppers and serve it in a fajita wrap

    at the minute i get chicken in bulk from the cash and carry (25 euro for 24 large fillets) - I freeze it in 200g portions rapped in cling film

    Then I make a box of old el paso fajitas with 100g chicken in each meal and raw broccoli. Makes 4 plates of fajitas which I cover and put in the fridge. I reheat and eat these over the course of 2 days in work (I only cook once every 2 days for 45 minutes which includes 8 other small meals :pac::pac::pac::pac: but we're on chicken so i wont bore you)

    works out pretty cheap...

    ive also got into the habbit of slapping a chicken breast or 4 in a wrap...very good quick meal

    Dice or slice up some chicken breasts and dip in bowl of whisked egg (makes the chicken sticky)

    Blend up a few tablespoons of oats - not too finely so they add crunch to the chicken - and add in seasoning. I like cajun spices or lots of chilli and garlic.

    Dip the chicken pieces in the seasoned oats and bake in oven with a little olive oil for 15 mins or so.

    Yummy spicy crunchy chicken pieces...

    Sounds deelish - I will be cutting soon - this could be very useful as an evening meal!

    Whatever you have to hand - I use either the Odlums organic ones or the packs from Lidl. The Lidl ones are crunchier. Just not the quick cook ones 'cos they're softer.
    I've experimented with adding some milled flax seeds to them too, not quite as crunchy but ok...

    Second fav chicken recipe for ye:
    Slice or dice chicken breasts and marinade in some lemon juice - even for a few mins, makes the chicken softer/moister.
    Mix a few tablespoons of Greek yogurt (the higher fat content type of yoghurt) with olive oil and some Tandoori spice and throw in the chicken/lemon and mix up.
    Spread on some tin foil and grill, serve with lemon sedge and thinly sliced onion and it's totally delicious (and low carb).

    i advise anyone to try the crispy chicken. just did it there now, amazing!

    i didnt blend the oats, might next time and left the chickn sitting in lemon and garlic while waiting for the oven to heat up. i used corriander in with the oats.

    waiting for it to cook, blended a few cherry tomatoes, pepper and half a chilli with a bit of lemon juice (used far too much myself). ate it as a dipping sauce with it....had to breasts worth and im dying for more!

    The roll is by far the worst bit, especially a white roll. I use wholemeal pittas, even these are around 200kcal each, while a medium 140g fillet is around 160kcal. Those bageuttes have loads of calories. I also use iceberg lettuce as wraps.

    i could be way off, but something is telling me the chicken fillet from a deli would be a fair bit more than 160kcal, thinkning the coating could be quite a bit downfall, yes/no?

    And that's assuming whats inside is 100% chicken in the first place. I would imagine it is horribly processed, so its probably best to stay clear of it
