Adjusting to 'new' regime...

Well, with final year of college and work, I don't get the time to work out that I would like, and so I've had to adjust my diet accordingly. I haven't been to the gym in countless months, and have to settle for a home routine a few nights a week - normally broken down in triceps/chest/traps, biceps/back, and shoulders for an evening of their own. I used to be able to get away with eating all kinds of crap and it didn't really matter because I spent a good bit of time in the gym, but now its slowly but surely taking its toll so recently I've been trying to clean it up a bit. Here's what I've got:
7:30 Bowl Porridge with 2 scoops whey
    1 Glass OJ

    10:30 1 Pint lo-fat milk

1:00 Sandwich with plain chicken and cheese.

    4:00 1 Pint lo-fat milk

6:00/7:00 Dinner consisting of chicken and bread/rice/pasta

    9:00 Yoghurt

11:00 1 Scoop whey with milk

Note: On days I'm working out, I'd have a glass of milk around 6, 1 hour
weights, then 2 scoops of whey with added sugar, with dinner around 9.

Any suggestions on improvement? Is it enough to maintain and possibly bit a very limited amount of muscle? Will be summer before I'll be getting back into it (the gym) properly.
