Ghostwriting

Just have a general query here about ghostwriting. I was reading a piece somewhere recently about the percentage of books published that are actually ghostwritten. I know sports writers tend to write autobiographies with football players, etc but I was wondering is there a demand there from publishing companies for ghostwriters? Would they have people employed to write books for others? Is it something for writers that'd be worth getting into?
Also, on the publishing industry in general, is there work out there for editors, proofreaders, etc or is it a tough world to get into?
