for somebody who hasn't done squats before would I be better starting off by doing lunges?

    less chance of injury?
    more stability?

or use a leg press machine?

Well i wouldnt know which is the better, but whatever you do, dont choose a machine over squats and lunges.

    Both...

    Learn how to squat properly.

Use lunges to even out any assymetric imbalances you might have.

I actually found it easier starting with lunges as I just couldn't do squats with proper form easily, so I concentrated on lunges for a few weeks and then went back to give squats a go and actually found it a lot easier to get the movement right. Don't know if it's just a co-incidence though! :)

There are lots of different ways to squat. If you are worried about balance with a heavy bar on your back, start with dumbbell squats or front squats.

    front squats.

Maybe it's just me but I know I was very uncomfortable with front squats when I started training (Probably due to my bony shoulders). I'd definitely recommend back squats before front but again, that's just me.

I'm plagiarising Starting Strength here but learning how to back squat is difficult enough without complicating matters by learning the front squat, which is a totally different movement.

Besides, nothing beats squatting, nothing. It should be your priority to learn how to squat properly, and after that it should be the bread and butter of your lower body workout. You can take that from a man who hated this exercise for years, and now squats more or less every session... uh.. me, in case that wasn't clear enough.

Lunges are great but are an assistance exercise for the squat if you're interested in strength.
