Chicken Fillets

    How do you eat yours? I find no matter what I try they always end up too dry and a couple days in a row of them reallys gets boring. Any ideas to change things around a little?

    While im on it, same with tuna. Usally for me its a massive dollop of the tinned stuff at lunch with maybe half a lemon sqeazed over it. Just looking to see if others have any other idea's.

    My motto is; "If in doubt, add cheese :) " .

    Or you could try some oils. I normally use sesame oil on my chicken and think it tastes great. Recently tried cashew oil too which is nice as well.

    I'm eating chicken fillets right now. I cut them up into tiny chunks covered them in extra virgin olive oil, sprinkled on a few spices as well. Delicious!

    A lot of the time I cook them with mushrooms as well, damn good!

    I love chicken.. never get bored of it. Fried, boiled, roasted. In a casserole or just plain on it's own.. or in a sandwich.. mmm. Same with tuna... I just grab a fork and eat it out of the tin, or maybe in a sandwich. I'm not a fussy eater anyway. :D

    Wrap em in a rasher, put em in the oven for around 20 mins at full heat.

    Chicken fillets can get boring alright, I tend to cook them in the oven either with pesto on , or some olive oil and some mixed pepper corn, or some spices in the oven. Would usually have with rice or pasta .. Salmon darnes are a good alternative to chicken aswell ! Tuna i tend to have at lunch on a wholemeal pitta wth lettuce, onion, cucumber tomato and beetroot..

    boil the chicken breast for 20-30 minutes until cooked. Transfer to chopping board and using a rolling pin, beat the crap out of it until its broken and shredded.

    I serve that on shredded lettuce and cucumber sticks and cover with a hot sauce.

    Make a sauce from the following:
    2 Tblsp Tahini/Sesame paste
    3 Tblsp light soy sauce
    1 Tblsp Chinese black vinegar
    2 tsp sesame oil
    1 Tblsp granulated sugar
    2 Tblsp hot chili oil
    2 Tsp toasted sesame seeds
    1/2 tsp crushed chinese peppercorns
    1/2 tsp cornflour in 2 Tbs water
    1 tablespoon shredded scallion (green onion, spring onion), white part only

    Sprinkle with chopped scallions and grate some carrot on for a garnish.

    It is dry due to overcooking. Lay it down flat on a chopping board, press your palm on top, now cut parallel to the board. Now you have 2 thin fillets. These will cook through very quickly. I leave mine marinate in sesame oil, garlic, chilli powder and soy sauce. Cook quickly in a pan, cut down the centre of the thickest part to check it is cooked. I sometimes cook some cashew nuts with them too.

    I also just rub on various spices, go down the asian shops and you get them for nothing. Tandoori, curry powder etc.

    I like a bit of marinade on mine, lakeshore is the stuff get it from tesco's they have sweet chilli and garlic and hot and spicy. Dice up the chicken leave it in for 30 minutes or how ever long you can, then stir fry with some peppers server with brown rice :)

    I think I'll give rubadub's recipe a try there sounds good.

    To be honest I never used to eat chicken that much but once you make it a bit interesting its the job, sometimes I could eat it 2 to 3 times a day.

    Oh yeah, I'm the same. Just get a fillet, place on a piece of tinfoil - big enough to wrap around the fillet - slop on a small spoonful of pesto, throw on some finely cut peppers, some olive oil and then wrap the foil loosely over it all.

    Put in oven for 35/40mins at Gas Mark 6 and voila!- some tasty protein and veg!

    Do, it is so good. I dice the chicken, marinade for a few hours then stirfry with mushrooms and peppers and Chinese five spice. Serve with some rice or noodles. The chicken is so tender from the marinade ;)

    Score each fillet deeply with a sharp knife and put them in a bowl with a glug of olive oil, lemon juice, salt and pepper. On a dry pan, roast some ground coriander ( a heaped tsp per fillet). Add to chicken and mix around to coat. Leave to marinade for up to an hour. Preheat oven to 180 C ( or higher - I use gas mark 8). Lay fillets in oven proof dish and cook for 20 - 30 minutes.

    Fillets get dry when overcooked. Check the thickest part of the largest fillet to see if it is cooked after 20 minutes by making a tiny cut in it. If you see any pinkness, return to oven for another 5 minutes and check again.

    Drain a can of puy lentils and put into serving dish. Add lemon juice, salt, pepper, olive oil and chopped fresh coriander. Mix. Lay chicken on top and pour over cooking juices.

    Serve with salad.

    It's really good the next day too.

    I sometimes put Pliladelphia light in the middle and lash on a whole load of herbs or spices. Mmmmm - I know what I'm haveing for dinner :)

    Can ye cook chicken by steamin it? They brought out steamer bags for the microwave but doesnt seem 3 safe

    In general I just chop mine up. Cooks in minutes. Whilst dependant on what you serve it with Cajun spiced chicken is gorgeous.

    If I'm just in a rush and not cooking for the gf I just chop it up, salt pepper it, fry it. Then boil alot of frozen mixed veg, drain, add veggie oxo cube, wedge of garlic butter (bold I know) and then chicken in on top. Mix together and dinner is made is around 10-15 mins with barely any washing up afterwards. Also works with pork.

    Dunno. I've seen chefs boiling chicken fillets on tv before. Cooked in like 2 seconds flat as well but I just haven't gotten around to trying it myself. I don't see why you couldn't steam chicken as long as it cooked through.

    Yes, I steam chicken the odd time, works fine.

    Another quick and easy microwave method is to get a bowl and put sauce in it, like curry sauce or tomato pasta sauce. Stick it in the microwave and heat it up to boiling. While it is heating cut up a fillet into small bits, I actually use a scissors. Now after it is heated until it is bubbling stir in the chicken, now stick it back in for 2-3mins on medium, so it is just at boiling. Then I leave it stand for a few minutes. If it is cut up small enough it will be cooked through quickly, and it wont be gone dry or hard, which could happen if you microwaved a fillet on its own. Pick out a big bit and cut it if you want to check if it is cooked.

    Plenty of protein and sod all fat. They're also cheap, tasty and a million and one things can be done with them.

    I have them in salad with baby spinach leaves and cottage cheese (tesco onion one). Get a piece of foil twice the size of a baking tray, lay the fillets on the foil the foil over the top then fold the edges to seal and then bake for 30 mins. I let it cool for a few mins before slicing the chicken then stick the chicken and stock (loads of stock comes out) in a bowl - the stock keeps the chicken nice and moist in the fridge.
