Is there something healthy one can do with the unused yolk, or do people just dump them?

Why avoid the yolk (out of curiosity)?

Ordinarily I'd say yoke away. However I'm guessing the idea of wanting liquid egg whites is for a quick influx of protein, ala whey. If that's the case then the fat in the yoke will only slow down absorption.

    And it tastes yucky...

Ah right, that makes sense. Cheers. :)

like trib said, sometimes people only want the whites for protein: an egg white contains nothing but water and 50% of the overall protein content of the egg. The yolk contains the other 50% but also has the fat, vitamins and minerals. If you're calorie conscious, taking the yolk out is an easy way to get your protein - generally I make scrambled eggs with one whole egg and two whites. If you were really watching your diet though you can take it up a notch, and egg-white omelettes are a favourite on the menu of a lot of bodybuilders and fitness models. Sounds rather unappetising personally :p

And that's *brilliant* news about the egg whites Jon - keep us updated about that, I'm quite sure I'll be availing of them in the future!!

Yep as a self-confessed lazy git as well, I'll be checking out your whites soon as well Jon.

All this juggling about between egg shells and spilling stuff all over the place, and myself, doesn't appeal to me.

yeh we're all eggstatic about it.

    ok enough of that :D

Stop throwing out the yolks, they are good for you. The latest research seems to show that eggs are your best weapon in the fight against high cholesterol. Three whole eggs a day turns LDL cholesterol into HDL.

You can make a great (and easy) chocolate sauce with egg yolks. Mix some sweetened espresso with some cocoa powder, then add a raw egg yolk to thicken it.

Why not just buy eggs? They come in liquid form until you cook them!

    Convenience!

with bought liquid egg whites they can be eaten raw with no chance of salmonella and the because they are pasterised the absortion of the protein is high (appox 90%) in comparison to normal raw eggs (50%) so they do not need further cooking. Very handy and very tasty!

    BUMP

I used to buy those Two Chicks egg whites in Dunnes but they're bloody expensive, the guts of a fiver for a small carton.

    Any better sources?

This may help but we recently got a new milkman who delivers me eggs every week and also offered 5kg tubs of egg whites, I aint saying i'll supply :), i'm just saying if you have a milkman you could ask him;)

Them ones in dunnes have thickeners added also meaning you cant blend them in with sakes with oats and protein etc.!

Why not just eat whole cooked eggs or separate out the yokes by hand of you're really stuck
