I was told today in an interview, quite harshly too that this was wrong.
Could somebody please enlighten me.

"I find photo's an amazing way of expressing yourself"

' is used to show ownership like the dog's coat or Sean's computer

so i think it should just me "I find photos an amazing way of expressing yourself"

What you wrote is,

I find photo is an amazing way of expressing yourself.

I would say,

I find that photos are an amazing way of expressing yourself.

If you're talking about people in general or yourself in particular, you should say 'oneself' or 'myself', by saying yourself you're talking about the other person. People don't always like you to tell them what they believe.

Can you not think of anything other than amazing such as refreshing, brilliant, wonderfgul, intriguing.
