Protein-rich foods?

I've recently started hitting the pool again in an effort to reduce the beer-gut, avoid a weight gain from quitting smoking and just tone up in general . I've been going an average of 4 times a week initially for 30 minutes swim-time but I've built that up to 45 mins of continuous lengths at this stage. I have two main questions if anyone has the answers, I'd be very greatful.

Will I get better/faster results by mixing this with gym sessions? Should I be going swimming twice a week and alternating that with two sessions in the gym (sessions to me being a half hour cardio and a circuit of the machine weights)?

Am I better to focus on a diet of mainly fruit and veg in order to lose weight or should I be trying to eat a lot of protein-rich foods in order to try and build muscle to 'burn' the fat for me? If the latter, can anyone recommend some good protein-rich snacks that are low in carbs/fats? I know nuts are protein rich but I've heard that most of them are pretty high in fat content as well?

    Typical diet at the moment:

    Breakfast
Actimel 0.1% and small bowl of Jordan's Country Crisp Cereal

    Lunch
Demi-baguette with low-fat philadelphia and pesto

    Dinner
Stir fry or Lean Steak/Chicken with Salad

Where I fall down is in unhealthy snacks, so suggestions of healthy ones would be appreciated!

You are getting a very small amount of protein in that diet. One serving day at dinner. Heres what I'd suggest,

Fromage Frais (500g tub gives 40g protein)
    6 egg whites
    Tuna
    Chicken fillets
Protein shake if you want to go that way.

Thanks base2, fraid I was editing the post when you replied...

So, I should be trying to eat plenty of protein then?

I snack on chicken instead of junk at mid afternoon or at night time. Fills me up more actually, as well as being good for you protein wise. I don't think I'll be resorting to shakes just yet, and I hate most of the other good sources of protein, so it's the best option for me.

    Either of the below -

    A pint of lo-fat milk
Half a tub of natural yoghurt
Whey protein powder [buy the ones with 40+ grams of protein]
Cashew nuts [1 Oz - 28 nuts a day ] Good fats that you need are in nuts, limit them though
    Almonds [1Oz - 23 nuts a day]
    Natural peanut butter
