Exercise advice for weight loss

Very long time reader that never posts - seeking some fitness information.

    Stats: height 6'1
My initial weight was 330lbs currently I’m at 208lbs.
    Waist diameter is 37"

Overall, the weight loss has taken three years, in which time I have changed my approach to loosing weight roughly every 6 months. In the first year it was quite easy in terms of just cutting down on food and seeing immediate results. In the second year I started to exercise regularly by walking (approx 40 mins a day) and at the end, attending the gym (logged around 50 sessions over 6 months there). In the gym I was very impressed with the level of fitness I managed to attain - being able to lift even a small amount and running for 20 min. as opposed to 5 seconds etc... However, I was a bit let down with the weight loss; I found my appetite increased a lot. Even though I put on a fair bit of muscle and lost some fat - I was quite obese. After stopping the gym, maintaining the walking and reverting to around a 1500-2000cal a day / fairly healthy diet and particularly cutting down on alcohol (definitely the most effective diet change I have ever made), I managed to kick another 3 stone. I’m at a bit of a cross roads now and need some of your opinions on a number of things:

    a) What weight should I aim to come down to? I’m not really sure tbh (maybe 12 stone)
    b) Should I perhaps drop another stone conventionally before I go back to the gym just in case it messes up my metabolism/appetite and routine etc… like it did in the past?
    b) If I go back to the gym what sort of exercises and program would you recommend towards achieving firstly, fat loss and secondly, to improve upper body and very bad posture.
    c) What sort of calorie consumption should I aim for on said exercise program.

Many thanks in advance for any suggestions. The knowledge available in this forum has helped me a lot in the past and I would be grateful if anyone had ideas for getting over this last hump.
