Digital Audio Format Conversion Conundrum

I have an unused minidisc deck sitting idle in my stereo stack, and by accident i noticed that it's got a D/A Pass-Through mode (converting anything at the Optical Input to Analog Sound). This would be great to clean-up the sound of my SB Live! 5.1 card (a great sound card but there's a bit too much hiss when it's idle), and would make use of the superior D/A converter in the MD Deck.

Now, the problem is that the output on the SB Live! is a bit non-standard. It's a coax output but on a stereo minijack. What would everyone recommend to do to convert this to a coax? I'm tempted to try a 1/8" minijack to RCA connector.

Secondly, what is a good cheap device to convert Coax to Optical.
