I have three of these in a bed, and this year they’ve really exploded in growth. I don’t want them getting any bigger, would like to cut them back a small bit.

What’s the best time and method to do this without causing the plant any damage or killing the thing!

Cut off the dead flowerheads and trim to shape at the end of flowering. If you want to make it smaller again it is recommended to prune back in spring. You can take off a fair bit but don't do it all at once, shape the bush back branch by branch over a couple of seasons and go back to a bud rather than cutting out whole branches. Hebes can grow straggly if neglected, and they have a tendency to be a bit short lived.
