    I don't think I would eat in a Sushi restaurant that is a 1000 miles form the sea.

    All Sushi is frozen at some point to kill bacteria I think.

    I remember from Germany that Fish shops in cities away from the coast only got one delivery a week, the trick was to know the day so you weren't buying week old stuff. Maybe Sushi restaurants have a system in place

    Freezing doesnt kill (most) bacteria, it just inactivates them.

    There's even bacteria that like it "brisk"- cryophilic

    Ah,parasites it is. Illegal to sell sushi in the US apparently unless it has been frozen.
