Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    I find posting to imgur.com and getting a link is very good, and you can even add a letter yourself before .jpg to change the size , s,m,l for small, medium or large.


    For instance in my pic above it is imgur .com/UZtIHocl.jpg to indicate large, if I change that to imgur .com/UZtIHocm.jpg it would be smaller.

    More birthday food. Veginity used to sell slices of a poppy seed frangipane which is my girlfriends favourite cake in the world. They stopped doing it at the start of the pandemic and she has been talking about to ever since. They don't do orders but I asked in case they would, and they made it for me to give to her, my ears have barely recovered from her excitement hahaha.

    Green lentil and cabbage stew.
    -Cumin seeds, mustard seeds, chillies.
    Onion, cabbage, stock cube.
    Garlic, lentils, water.
    Tumeric, fenugreek powder, black pepper.
    Chopped tomatoes, tomatoe paste, a little kale, Cannellini beans.
    Bunch of coriander.

    Had it with peas and turnip today.
    Good old red sauce.

    Hot mash, chickpeas and salad( red onion, beetroot tesco cheese, jalapeños, capers, a lump of sauerkraut ( get your k2- helps bind calcium for strong bones ) Vegan mayo, balsamic vinegar).

    Filled a hole.

    Onion, garlic, mushrooms, spinach, mixed herbs, porcini power and nutritional yeast.

    Cream - cashews (soaked in boiled water for 30 minutes) then blended with oatly

    Served on toasted Ezekiel sprouted bread.

    Finally got out for Vegan Chinese food last night after the long lockdown. M and L have a pretty big vegan selection. We got the Malatang, Deep fried aubergine in sweet and sour and some garlic Bok Choi.

    Curry with pineapple and heavy on the star aniseed for a lovely liquorice flavour.

    Mash, broccoli and Aldi roast.
    Baked roast in tinfoil for 1/2 hour and removed it for final 5 to 10 mins.
    Mint sauce on broccoli and cranberry on roast.

    Red lentil stew.
    Cumin seeds, chilli peppers/flakes.
    Half a leek. Garlic.
    2 carrots, half a butternut squash, yellow bell pepper, mushrooms 300g soaked washed red lentils.
    Can of coconut milk. Two veg stock cubes. Tumeric, black pepper, cayenne powder, heavy on the paprika and smoked paprika.
    Tin of chopped tomatoes, rosemary, onion powder, soy sauce. Kale and spinach.

    Turned out really tasty.

    This is just amazing. Have altered the recipe a tad after the first time I cooked it.

    Served with steamed kale and broccoli. The rice is a mixture with quinoa. I just add a half a cup of each in to the rice cooker and it’s simple as.

    You won’t fail to impress with this stroganoff.

    Hope you make it to the last photo because I think it also looks great on a plate.

    I made a creamy pasta bake using the Emlea plant cream. We had enough left over to put with some apple crumble and its just as good as the real thing. The non vegans tried it and said they couldn't tell it wasn't milk based.

    Cashew cream is so easy to make and it’s amazing.

    Very versatile and I make it thick or runny depending on what it’s needed for. It’s also easy to flavour in any way you want.

    We always have about 1kg of raw unsalted cashews knocking about. We use them a lot.

    These are well worth the effort.

    I’ve altered the recipe, as always, having made them before.

    My biggest tip - don’t put in ANY chili powder and 2 tablespoons is a crazy amount anyway. Instead I use 1 of a teaspoon of chipotle.

    I also added a beyond meat type mince.

    Started a one week challenge with deliveroo yesterday, where they get me to eat vegan options for a week for veganuary.

    Pictured is the Mucho Vegano bowl with vegan chorizo with added pineapple, and the Chili del Rey tacos which come in blue corn tortillas, from nutbutter.

    Secondly the vegan bento box with teriyaki tofu, noodles, gyōza and avocado sushi. I also ordered additional various sushi including tofu inari, nigiri and avocado futomaki.
