    Made a Jamie Oliver tofu burger last night (and yes I realise this is my second burger post in a row!), was pretty good! Messy enough preparing the burgers as you have to drain the tofu then mix it with breadcrumbs, egg, and marmite; but it ended up being very tasty, with a homemade salsa and topped with gherkins.

    Seriously lads I need to set up that account to post images directly. That said tonight I tried a dish I've had many times abroad and one of my personal faves!

    Jamaican Curry Chicken! I didn't manage the rice and peas boiled in coconut milk, but next time with images, I promise. So yummy.

    Yesterday was nut and bean roast, roast potatoes, peas and gravy. I'm very happy with the nut roast recipe I tried, it's the first one I really like.

    I made curried lentils and chickpeas with pulled spicy chicken.

    Didn't know Aldi does sweet potato fries until I read your post, so I went to get them today. :) Thanks G!


    With them, I had roasted green chicken adapted from Nom Nom Paleo's recipe, with a few tweaks. Oh man alive.

    Thai style prawn, chilli and lemongrass fish cakes.

    Served with a salad that consisted of mixed leaves, rocket, radishes, cucumber, scallions and a boiled egg.

    I tossed the salad in some chilli/lime dressing I bought from Johnstown garden centre in Naas (delicious)

    I had this dinner in my brain for a few weeks now, but only got around to making this evening.

    It was so handy to make I didn't expect much of it, more of an experiment.

    Aldi Puff Pastry
    Left over roast chicken
    Mushrooms - that I cooked and forgot to add in!!!
    1 x fried onion
    Half a fried yellow pepper
    Tim of Erin condensed cream of chicken soup.

    Served with mashed potatoes.

    Sooooo tasty I even impressed myself!

    Tonight I have colcannon, salted carrots, sausages, caramelized onion and gravy.

    Last night I'd homemade burgers, mushrooms, onions, beans, gravy and mashed potato.
    The mushrooms were the ones I forgot to use in the pie!

    Tonight I'm doing Ham and Cabbage, boiled spuds skin on.
    - and brown sauce of course!

    Meatballs (beef & pork) in courgette, tomato & chilli sauce with wet polenta.

    The polenta was a first for the Billy household. It was eaten, but I doubt if I'll be asked to do it again.

    Spaghetti Amatriciana from The Silver Spoon cookbook. Onion, pancetta, peeled and seeded tomatoes and chilli with pasta. So simple, so tasty.

    Boiled bacon loin, lovely fresh winter cabbage (cooked in bacon water), some of Lidl's baby roosters boiled in their skins (from their specials this/last week) and home made parsely sauce. Delicious Sunday dinner :D

    Indulged in a bit of early Christmas shopping yesterday.

    Dinner for me was chicken and mushroom soup, with a freshly baked baguette for starter.

    "Wing sauce pizza" with hand cut chips for the main event.

    Toblerone cheesecake, and a cup of freshly brewed coffee to finish.
