Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    Made another one...

... but the base didn't rise in the centre and probably could have down with some more baking time, while at the same time the crumb topping was slightly overcooked. It was baked at about 170 degrees for 50 minutes or so.

Anyone have any ideas on what went wrong?

I was thinking for the next time maybe lowering the temperature a bit and leaving it in for longer and/or covering the top with tinfoil.

Short version is - Shortcrust pastry base, Lemon curd filling and meringue topping.
Cheats tip - buy a ready made pastry case, jar of lemon curd and all you've to do is whip up your egg whites and sugar and bang in the oven, easy peasy nyomageness!! :P
    Recipe on request!

Birthday cake for the young one, she wanted choc. eggs on top rather than orange segments. Recipe from Avoca book 1 choc. orange cake.

Someone stole one of the eggs before pic was taken, typical. I'm not very arty so just threw the eggs on. The cake was nummy though.

Going to try my hand at a hazelnut Vaccherin thingy (scuse spelling) this weekend.

I made this at the weekend and was very very nice
though some tips for people if they want to try it.

(I love cheesecake and have made it a good few times)

Instead of 3 packets of cream cheese, use 2 and 1 packet (300ml) of sour cream, this will make the cheesecake much lighter and tastes better (IMO) when baked.

Bake at a lower temperature for longer. I use 140c and turn off the oven and leave it there over night, produces a much tastier baked taste.

have a look here http://www.timesonline.co.uk/tol/life_and_style/food_and_drink/recipes/article2582989.ece, I usually this as the chesecake base. and when I try this again, I will use GR rather than the above.

The brownie and chocolate layer are amazing

    That castley cake is amazing!

Made a chocolate Malteaser cake, have only one cake tin in the size I needed so measured it a bit wrongly ones a bit bigger than the other.
I'm not a fan of buttercream so for once I won't be scoffing the lot.
It's Nigellas recipe and tbh not Malty enough in my opinion.

The characters are made by me too. I never use inedible figurines on my cakes. :)

  • Registered Users, Registered Users 2 Posts: 5,132 ✭✭✭Sigma Force

Wow, they're excellent sometimes when I see pics of cakes esp. kids ones the characters don't look so great but those guys are fab. Love the Goombahs I think they're called. The wee brown guys.

    Grannys Chocolate Cobbler!

A mouth watering Chocolate cake with a crispy and crunchy top, concealing a moist cake and rich chocolate syrup.

I baked this on Sunday. And without doubt was one of the easiest cakes ive ever baked! Everyone enjoyed it served warm with a scoop of vanilla ice-cream! And it gets slightly stuck around the edges of the baking dish, which was great for the kiddies to gather around and scrape the bowl!! HEAVEN! :)

P.s The temperature in in Fahrenheit and in degrees Celsius would be 175, and my cake took maybe 50 mins to get that crunchy top layer!
