    Today when a couple get married, most of the time the church chosen to be married in is the brides parish church....... would it have been the same in the 1800/1900's (mostly)?

    yes - but it would usually be the bride's current parish. Not necessarily the parish she was baptized. e.g. lots of my relatives married in Dublin but were born elsewhere.
