Is it possible to use a Baxi central heating boiler for heating water only during the Summer?

Yes, it's no problem, just turn off the radiators.
Depending on the type of heating system that you have it may be necessary to turn off each individual radiator, or there may be a single valve in the hot press, or by turning off the thermostat on a wall, or just select Off on the hot water channel on the time clock.
Also make sure that the boiler is not turned up excessively high, you rarely need the boiler turned up full to produce a sufficient amount of hot water.
