2012 Cooking Club Week 8: Brown Soda Bread

    The following recipe makes 3 loaves. Bread can be frozen for later date.

    Ingredients
    1lb 4ozs flour
    1lb 6ozs stoneground brown flour
    4 level tsps salt
    2 heaped tsp bread soda
    2 level tblsp caster sugar
    1ltr Butter Milk
    3 2lb loaf tins – non-stick
    Basin for mixing
    Wire Rack for Cooling

    Step 1

    Add brown flour to basin. Sift cream flower together with baking soda and salt and add to basin.
    Mix together mixture with hands.

    Mix in caster sugar

    Step 2

    Make well in middle of flour and add butter milk.

    Mix with tablespoon until you get a sticky consistency. If mixture is still too wet add more brown flour.

    Step 3

    Shake some brown flour onto a work surface and tip the bread mixture out onto it. Shake some brown flour over the wet dough for ease of handling. Kneed dough into a rectangular shape.

    Cut with knife into 3 equal rectangular shapes. Shake some brown flour into base of loaf tins.

    Place in loaf tins.

    Make cross on surface of dough to allow bread to breathe.

    Step 4

    Pre heat oven to 220 degrees/Gas Mark 7.

    Bake for 35 minutes.

    Remove from oven and tap out of loaf tins onto wire tray.

    Bottom of bread may be still a bit soggy. Turn upside down in oven and allow to bake for 5 more minutes to crisp up.

    Just had the one made by Des ^^^^ for my lunch.

    Very nice, if des is willing to make it again, i will eat as i am too lazy to do the keeding, i use a non-kneed receipe, food processor recipe .

    I made some this morning. I didn't kneed it too well but I'm happy with it, and it tastes yum!!! cannot wait to make it again.

    Just an update for this.

    For the stoneground brown flour I recommend people buy Abbey stoneground flour(from Roscrea).

    Have tried to make the bread with other brands but it is not as fine.

    In fact you are not supposed to knead soda bread, just mix it the minimum amount required to shape it, which is what the original recipe said, but the word knead makes it sound like you have to work it for 5/10 minutes like with yeast dough.

    Soda bread can be in the oven in 5 minutes.

    Looks lovely, by the way.

    i like my bread with sesame seeds on top could I sprinkle this cake with them? wouldnt they burn?

    No, they shouldn't.

    Sesame seeds have a high oil content and that prevents them from scorching.

    Hotdog and burger buns are baked with sesame seeds sprinkled over them and they don't burn.

    I've been baking this recipe! Its really good. Can't get good brown flour in Canada though so probably aren't as good as they could be. I bake 3 at a time and freeze 2, because I can only buy buttermilk by the litre and have no other use for it. They freeze well and taste really fresh when thawed.

    Made this yesterday. Very easy straight forward receipe with very tasty results. Will use this receipe in future.
