Depending on your price range, there's the two 5 Star hotels; The Balmoral and The Waldorf Astoria Caledonia, both on either ends of Princes Street.
The Sheraton is at the bottom of the Castle but a steep walk up.

Hotel Du Vin might also work, it's off the Royal Mile, has a great on site restaurant and is close to the castle, Royal Mile and The Meadows so it would cover off different aspects of the city for them.

Ibis Styles on Andrews Square is nice and in a handy location.

Are they coming to do anything in particular that it would be handy to be near and what sort of price range are you looking at?

There's a crazy number of places to stay in Edinburgh and if you book them somewhere in the new town but they are heading to the old town every day the up hill walk might become a it of a drag for them after a few days.

Mid range would depend on your range, if you deem £100 too expensive it's one thing, if it's £150 it's another.
I don't know of any hotel that offers entertainment (outside of Burns' Suppers and all that).

What would they normally do during the day? Castle? Shopping? That's what we were actually getting at when we asked.
