Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. A workaround that has been used by some is to navigate back from 1 to 10+ pages to re-sync the thread and this will then show the latest posts. Thanks, Mike.

    We had a veggie round for dinner but there was a turkey korma for us carnivores.

    Bruschetta to use up some tomato pesto, cherry tomatoes and and very ripe goat cheese.

    Blended the pesto with extra garlic, topped some sliced baguette slices with it, the chopped tomatoes and cheese. Baked bits of pure yum.

    Cheesey baked Enchiladas with chicken, onion, peppers, jalapenos, pinto and kidney beans, served with some refried beans on the side (I won't even say what my wife said they looked like. :D)

    I agree with your wife about the beans,,,. Enchiladas look lovely though.

    Last nights dinner was home made steak and veg pie, done in a short crust pastry with onion gravy, served with creamy mash on the side, and some sweet garden peas, with garlic butter.

    It was a very hearty meal that went down well after a long walk in the cold. Didnt tame pictures as we had company, and I didn't wanna look like they were dining with a lunatic. :)

    I follow an American recipe for it, calls for the skins left on the spuds, and there's tomato puree, paprika (as two ingredients not in.an Irish stew)

    The end result is a reddish colour with a slight hit of spiciness to it.

    It's always a big hit in our house

    Looks like my stew, lovely stuff. I generally just bang whatever in but always add a bit of spice, love it :)

    Yesterday was a slice of delicious roasted vegetable quiche purchased at the Dun Laoghaire People's Park food market and a heap of sweet potato fries...something quick and easy while we were trying to sort the house out for Christmas, it's been a bit neglected.

    Yesterday I made a Vietnamese curry from the Happy Pear cookbook. The recipe used tempeh but I used chicken instead, as I'm not a maniac. The curry was absolutely lovely, gorgeous flavours and very easy to make. The roasted butternut squash was yum.

    Mild cheddar/mozzarella, chorizo, guacamole, cashews, shallots - homemade vegan pizza by my friend, so the dairy/meat are alternatives.

    Here you go! My only change would be to peel the butternut squash - they suggest leaving it on but I firmly disagree.

    CHRISTMAS HAM! My husband made this beautiful beast today. He boiled it in ginger beer with lots of oranges, cloves, bay and cinnamon, then baked it with a glaze of maple syrup, mustard, soy sauce & worcestershire sauce.

    IT TASTES FRICKIN AWESOME!

    IT TASTES FRICKIN AWESOME!

    It looks amazing. Only that ours isn't long out of the oven I'd try it myself. We go apples with cider, onion, rosemary, cloves, cinnamon and peppercorns.

    Then our glaze was Colmans and brown sugar. Still gorgeous but less exotic.

    We had Scottish stovies. Our version had cooked onion plus leftovers: sliced mutton, sprouts, carrots, roast potatoes and gravy, layered in the pan.

    It's actually a great use for it. It's just a cheap ALDI one we got for making pancakes/waffles for the kid. Works great for making hash? from leftover potatoes and veg too. So easy too.

    We're sick of turkey and ham too so we had rib eye steaks for dinner tonight with sautéed potatoes, onions and mushrooms and roasted cherry tomatoes. Steak never tasted so good :)

    Wholemeal Slimbo slice, half a perfectly ripe avocado (:D), slice of smoked salmon and a poached eggs. Two of em. :) The other one not pictured was decidedly messier looking :)

    Probably one of the nicest things I've ever made. Spuntinos bone marrow beef sliders with brioche buns. I made chipotle slaw and crispy onions to go with them.

    Last night was chicken, cabbage and a baked potato, odd combination but one of the few appealing things to me right now. :)

    Here's the recipe. I got the bone marrow in The English Market in Cork but my local butchers in Cabra do it as well.

    For the chipotle slaw I roughed it. 1/2 cup red cabbage, 1/2 cup white cabbage, 1 carrot, 1 red onion , teaspoon honey, 1/2 cup mayo, 2 chipotle chills, juice of 1 lime.

    Last night's dinner was salmon fillet and a large vine tomato, both done on the griddle pan.

    Served with brown rice (the cheat's two-minute version as I can't be arsed waiting otherwise), runner beans and chilli sauce in a wee packet which came with the salmon. Tasty fayre!

    Just me and the kids today, so I gave in to their demands of a KFC dinner, but I made it myself

    Thighs and drumsticks done with a recipe from a book the wife has called "fakeaway" (or something) she had this one photo copied and stuck to the notice board (she's a vegetarian, so obviously a hint for us)

    Anyway. We had chicken, served with pineapple salsa on the side :

    (quarter pineapple, length ways, remove core and skin. Dry fry in a pan.for 5'mins or so to get them charred up. Then finely wife it, throw in a bowl complete with juice. Handful of finely chopped mint, finely chopped chilli (leave seeds in if you like a kick) finely diced small red onion, juice of a lime, stir well, then season)

    And a bowl of homemade chips.

    The chicken and the salsa were a great accompaniment to each other, though I think the next time I make it, I might ease up on the lime juice. (It was just a little bitter on its own)
