How to control Universal Motor Speed?

    Hi all. Need insight and advice from anyone in the know about such electronic matters.

    Basically i'm looking to control the speed of a motor but have no clue how to do so. The motor specs and a wiring diagram are in the pic below;

    Ideally i'd like to do this with a foot pedal like this one;

    The pedal is for an AC sewing machine, the sticker reads "200/250v 70/120w".

    Any ideas or direction? Any info no matter how basic, as i know nothing about this stuff, or advanced, as i can research it, is welcomed.
