Is there a way to turn off Lion's feature which re-opens all the documents I had open in Pages during my last session. This is generally handy for other applications but I want to turn it off for Pages.

    Thanks.

System Preferences > General > Restore windows when re-opening apps.

I don't think you can disable it for specific apps. It's all or nothing. If you close the windows in Pages before quitting they won't re-open.

Shame, some customisation would be handy. Pages drives me mad when it opens up all my previously viewed documents..

You should try RestoreMeNot, which lets you pick what applications you want restored when you open them.
