Where should you start, I've been way too long out of the saddle,
I need to start off slowly, not sure how far I should be cycling in the first few weeks. I haven't trained properly on a bike in over 10 years.
I also probably need to look at my diet a bit. Any advice much appreciated.

I've a feeling summer will be here shortly and want to be some way fit for it.

Pick a 100k sportif to do as a goal and look at the training plan for it, that should give you some structure to follow.

Here's the Sean Kelly Tour of Waterford and the training plan for the 100k. Its tough as a starter sportif, mind.

try a 10 or 15k route close to home to start, just so you wont sicken yourself starting off! gradually increase it, only you can determine how quickly you will improve, make sure that you are enjoying it and you'll get there.
Speaking from experience, I only got back on the bike this time last year, feeling fitter than ever now, considering tackling the Ring of Kerry now!
    Best of luck.
