Can you buy one for the itunes store and have them email the code or do they have to deliver it by post? There must be a way? or do I just allow the person to download what they want of my itunes and just say its a "gift card"

Go into the iTunes store and pick 'buy iTunes gifts'
you can email them a gift certificate
