How to become self-employed?

Hello. I'm sure this is written about somewhere obvious but I've checked all the stickies and can't find it.

Basically, my friend has had her hours cut in work. She has been offered the chance to teach some classes in the evening but for this it seems she needs to set herself up as self-employed. The guy offering the hours won't hire her per se, but said she should send him an invoice. We have no clue how to go abut doing this.
We presume we can't just type up an invoice on the computer, that she has to set herself up as a company or something. She seems to think there's an alternative but I don't think so.

I will go to citzensinformation but I'd like to at least know the name of what I'm looking for beforehand so that I can read up on it and ask appropriate questions. Any advice would be very much appreciated!
    Thanks.
