Been to a few places: * Laptop Shop * Peats * even HMV, who stocked it pre-Christmas. Where have I missed?

PC World - the larger ones at least have dedicated Mac sections now (I've been to the Jervis and Carrickmines ones and they do have Mac sections in store). I'd imagine you'd find it there.

Give PC World in Jervis Street a call, I was mooching about the Apple section just last week.. and they have a sizeable selection of boxed software.

Bang & Olufsen are official Apple retailers. I got mine in the one on the quays beside the Ha'Penny bridge.
