Some places that come to mind quickly to take visitors in the South East or Ireland

• The John F Kennedy Arboretum
• Dunbrody Famine Ship
• Glendalough

• You could do a nice drive to The Hook Lighthouse, then down to Duncannon and over to Waterford on the ferry and drive along the coast to Dunmore East, Tramore and follow on to Dungarvan (Copper Coast Drive)...drive back back the main roads.
• Kilkenny Castle, on the way to back wexford stop in Inistioge and visit Woodstock Gardens
  
• Sproai Festival in Waterford City, August Bank Holiday Weekend, really good buzz around the city. Plenty of street theatre and performers. Big night parade on the final night.
• Kilmeadon Vintage Train
• Book a weekend away in some unusual 'landmark' property through Irish Landmark Trust

You could take them to a show in the Wexford Opera house, I've heard it's really amazing.

There's the 1798 centre in Enniscorthy, a historical tour, while you are there you could visit Vinegar Hill which has spectacular views of the blackstairs mountains. You could also go visit the Cathedral in the town and walk past Enniscorthy Castle.
