Frozen rhubarb

    Hi guys,

    I've frozen some rhubarb I got in a veg box a few weeks ago. The rhubarb recipe I'm looking at doing isn't a crumble and requires the rhubarb to hold it's shape. Is defrosted rhubarb totally soggy?

    Frozen rhubarb fibers release considerable liquid when thawed and the fibers are mushy. This only effects the usefulness of frozen rhubarb when a firm piece of rhubarb is important to the texture of the dish. Since rhubarb softens and releases moisture as a normal part of the cooking process, this means frozen rhubarb is fine for cooked recipes. Indeed, it is superior to fresh for some recipes (pancakes, brownies...anything where you want the rhubarb evenly distributed throughout the dish instead of in chunks).

    Most things will high water content will expand when frozen and destroy the fibre structure, like mushrooms. I think commercially frozen stuff might be better as quick freezing might not allow as much time for expansion, not sure though.

    Did you know that you can freeze rhubarb without cooking it? Just thought I'd throw that in, it might hold its shape better if you froze it raw.
