I usually buy in the shops, but new working hours are prohibiting this. If I order a game online, in this case Assassin's Creed, is it usually dispatched on release day, or is it aimed to arrive on the day?

Play normally dispatch it a few days in advance. Although you probably won't get it on release day

I think it's aimed to arrive on release day in the UK (i.e. they post it a day or two beforehand).
So you'd probably get it 3-5 days after, depending on the post.
