Does this mean that there has to be more than 1 person or that no matter how many peeps there are it's a fixed price?!?! It's just that I was going to stay in a hostel in SF but ebookers have a city break for a little bit more that has a 5* hotel!!

You'll probably just end up paying a huge under occupancy supplement on the price... sometimes it even works out cheaper to just say two people are going instead.

Errr, if I see a price that says "25euro per person sharing" I understand it to mean 25euro per person, and not 25 for as many as you want in the room.

Per person sharing means exactly that
ie €25 per night per person sharing for 3 is a room for €75

Theres usually a single supplement as an extra to be paid if you are on your own.

This is travel agents just taking the piss. I've done this and paid without question - then seen the room rates on the back of the door - after arrival AND payment- can only say this is definitely true for Portugal and Greece.

The travel agent or tour operator just pays a supplement for an extra bed in a twin room and it works out less per-person for them. They don't always pass the reduction on apparently - I suspect this is true of most countries.

    Actually
I've only really seen the per person sharing here in Ireland.
Anytime I've booked a hotel on line for abroad,I'm asked how many per room and given a room rate.
