    Meh - don't think I'll be bothering with perfecting this curry. Don't know what I was expecting but it was rather bland. Added a cornstarch slurry because the sauce was very loose & a load of curry powder to try put some life into the sauce, without taking away from what the flavour should be.

    I only used half the jar of paste (because I made the mistake before of using too much Thai curry paste & it was far too salty) so maybe it might have been improved from using the whole jar 🤷‍♀️

    It wasn't the worst fail I've had & we at least ate it.

    Reducing the sauce rather than using cornstarch might have helped?

    Pulled pork for tonight, using 1.6 kg piece in the first picture EUR 12.50 , leaving fat on (makes amazing juice), sear it in my old cast iron dish (the most used thing for cooking here, priceless!) and shovel the meat into the slow cooker, onion and garlic at the bottom, one cup of chicken broth. Spices of choice, sometimes adding Dijon mustard on the meat or sriracha. One or two dinners for three from this and plenty of supplies for my sandwiches to work. Easy, cheap and almost effortless cooking, tastes great. Not finished yet I'll post results later, I'm working insane hours even over the weekends and this one is one of my favourites when there's no time for proper cooking.

    And of course my deputy chef is overlooking whole process, making sure I do it right😉

    Edit: Just back from work again today and got nice smell when opening backyard gate, cooking going well 🙂

    Thanks @igCorcaigh but I had the sauce cooking for about 25mins & was getting impatient so I improvised.

    I know I could attempt something like this from scratch but I was hoping using the paste & coconut milk would create a quick(ish) possibility of a mid week dinner.

    Black pudding, boiled baby potatoes with dill, sauteed spinach, beetroot in red wine vinegar, grated carrot with pumpkin seeds, lemon juice. English mustard.

    Was very tasty for a random dinner.

    I eat the same thing for dinner 8 days in a row while working away from home.

    Packed in the morning from the canteen, sweet potato, corn, peas, broccoli and some protein. Today was turkey breast.


    Microwave for 4 mins and a squirt of ketchup
