Zucchini (courgette) that tastes good?

    And wow.

    Diversifying my vegetable repertour, I tried eggplant but wasn't into it at all.

    I found a similar way to cook butternut squash, so that's next.

    But this zucchini looks good.

    Anyone eat this frequently, how do you like that (1 min) recipe in the video link?

    I looked up a ratatouille recipe made with PESTO.

    Looks great, and I absolutely love pesto, so hopefully it will taste as good as it looks.

    Zucchini, peppers, onion, tomato, eggplant, I'll try a little butternut squash.

    I stick half moons of Courgette into my stir fry, it soaks up flavour very well.

    For Aubergine, stabbing it a few times, wrapping in foil and roasting until the insides are soft makes amazing baba ganoush

    I have a booked by Diana Henry called "From the Oven to the Table" (One pot / tray oven recipes).

    That looks damn good, definitely going to try it.

    Plus I love sweet and sour.

    I like fritters also but unsure how this might turn out.

    Omlettes. Chopped red onion, grated courgette, fry, add mushrooms or spinach or whaever, then the eggs and some seasoning, oregano and top with goats cheese.

    Goats cheese and courgette go great together.

    Courgettes…. slice them really thinly and coat in olive oil and lots of garlic. Under a hot grill; some will get charred and blistered. Sprinkle of sea salt. Makes a nice side either hot or room temp.

    Courgette and aubergine....

    I add Courgette to everything, stirfries, curries, even chilli (although I know I'd be lynched for that) it's a great veg

    Sliced and cooked with salt and good olive oil on a griddle pan, delicious

    Aubergines I add to a lot of things and use as absove as well, but use it less than courgette

    If you're looking for easy to add veg then spinach is your only man, it goes in everything in this house

    Same as above poster. The only thing I would say is that it's real hit and miss with the skins if you leave them on. I always leave them on but they can be bitter enough with some batches (regardless of whether the courgettes are organic).

    I slice mega thinly in stir-fries but sliced lengthways thinly, brushed with oil and fried on the griddle pan is my favorite

    For stir-fries, I slice paper-thin with the mandolin. For the griddle, maybe half a cm thick.

    I made these roasted in pesto with Butternut Squash recently.

    The courgette was freaking delicious.

    I'm not feeling Butternut Squash however.

    good olive oil

    Is there a difference in olive oil qualities?

    I've been using the Tesco own brand, just cause it's cheap and I got through so much of it.

    The alternate would be the "Carlos" brand in the glass bottle, but I figured I'm just paying extra for the packaging?

    Not really worth paying a lot for oil you're going to cook with, there won't be much difference.
