Could someone explain what exactly this old socket that's never been used contains? Is it just a regular phone extension?

Doubling the cabling like that could be ok for an extension and ringing.But to extend the incoming ring to the next telephone another single wire should be connected to terminal 3.Can't see any nos in the block.

Is it okay to rip these out and use them to pull a Cat6 cable through? It's never been used nor will there ever be a need for a telephone here.

I believe you aware that Ethernet cables should be in "star"(out from central point) and not in "daisy-chain" layout.
