    Having a few scoops here with a duuurty chinese takeaway later. I'm adding my own spring rolls to the mix as in from the freezer, but they're nicer.:D

    Dunnes frozen vegetable ones are actually quite nice. Very hard to find a decent spring roll from a Chinese takeaway. They just use frozen, and not the best.

    The plan is to make a broccoli, mushroom, tofu stir fry with noodles.

    Boiled bacon ribs, SuperValu sausages and fresh crusty bread with lashings of butter. Lovely easy Friday dinner :D

    I made chicken tikka masala but I cheated slightly by using a shop bought paste. Everything else is from scratch. I added garam masala and lashings of chilli and lemon juice.
    It was really hot so l threw some sour cream on top I had leftover.
    Not one bit authentic but really tasty:)
    Now if only I had an ice cold cobra beer I'd be in heaven!

    I made a broccoli, mushroom and tofu "crumble" stir fry with thin egg noodles.

    It was delicious, but any photo of it would break your screen.

    One step at a time I guess.

    I like the idea of tofu as a crumble although I don't like tofu. You're not vegetarian are you..you just don't eat much meat?
    I have noodles for tomorrow. For the sauce im always in two minds whether to throw coconut milk in or keep it more salty and thin like soya and ginger

    The tofu was not meant to be crumbled, but my attempts to press it went awry.

    I'm the same with tofu, i think it has the potential to be lovely but ive only ever had it as little cubes in miso soup and i dont like it or as lumps in a burger. Gross.
    Interested in how you make things sour. I found a paste i reckon you'd love. It's everything you describe..hot, salty and sour. I love that too but I'm not sure how to recreate it. Im thinking lime and scotch bonnets could play a part and lemon zest.

    I throw a teaspoon into stir fried noodles with coconut water and stock. Delicious but so salty im surprised i don't shrivel up like a prune from dehydration afterwards:)
