I have to invest a lot this year in our servers / windows licenses.

The IT companies we deal with are both pushing office 365 massively. We have always had our own server for our mails.

It'll cost around 2000 euro to host our own between licenses etc (1 off cost) , or about €1000-1200 per year to go down the office 365 route. Considering I usually try to get 6-7 years out of a server / software, the 365 route is more expensive.

What do you all think? Is "everyone" moving to 365 like our IT companies are telling us?

Sounds like your retiring an SBS box / Server 2008.

    Office365 all the way.

2000 euro for a server running exchange and the cals. That sounds very reasonanble. Does this include warranty, ie 5 year next business day support also?

Microsoft is pushing for it more than IT companies, they are in favour of more of a subscription model.

The price which you are quoted, I suspect includes Office for the Users PC's also.

You should also be considering the following services to compliment your email, SPAM filter, Backup, Archive and Security Awareness Training.
