A junior colleague made allegations about remarks made during a routine work conversation against a senior person.

It went to HR and the senior person was requested to apologies for inappropriate remarks.

I also have to deal with this junior person. Can I state to him and HR based on previous that all our conversation will now have to be recorded so there is no ambiguity ?

That seems extreme, and unworkable. Speak to your HR department if you feel that strongly about it.
