At least if you can confirm the board is going to support it out of the box I would try and get the R5 2600? If nothing else it expects 2933MHz ram rather then 2666MHz of the R5 1600 but it also gives you a nice little speed bump. Confirming the board will support it out of the box though could be a pain
You spoke about a freesync monitor (or maybe 2) and have dropped from 1440p to 1080p so if you let people know what you are thinking about there and the budget including monitor(s) you might yet manage to squeeze in the 2600 and 16GB of ram!0 -

I think I'll drop FreeSync, seems to be very much unproven on the Xbox for now and I've learnt not to put too much trust in MS when it comes to future plans. It's possibly something I'd look for in my next TV in 3-5 years time.
I'm open to suggestions on the monitor. It all depends can I get 1440p or not. Requirements would be:
- 27"
- Decent adjustable stand
- Small bezel if possible to give me the option of adding a 2nd at a later date.

I've picked that video card because it's one of the cheaper ones listed and says "Gaming" on it, but that's the extent of my knowledge on it
Edit: Possibly ASUS VG275Q for the monitor, which also happens to be FreeSync so maybe I'll switch the card back to AMD0 -

A little bit of looking and I spotted an iiyama 1440p 75Hz Freesync monitor with height, tilt, rotation adjustment for the same sort of price which probably ticks all the boxes for you
I haven't changed your choice of case though to squeeze all this into the 1200 you might want to find something else from overclockers or amazon to keep shipping under control.
Note I've bumped the ram to 3200MHz (Ryzen really wants to do steps of 266MHz so this should allow one step of overclocking up from the 2933MHz standard speed) and also bumped it up to an 8GB rx580 :-D

I like it a lot :-) Only thing is the manual for the monitor says FreeSync support is through the DisplayPort, ideally I would need this through a HDMI port also so I can hook an Xbox up. Could be asking too much, but not sure the whole FreeSync approach is worth it without compatibility with the Xbox.0 -

ick, good catch, sorry :-/ In theory an active hdmi to displayport converter could work but ... yeah I've given up already trying to work out xbox Vs displayport + freesync and what sort of price of adapter you might be looking at!
You might be able to find something similar (or one with a rubbish stand but VESA mount so you can get your own stand for it in budget). Of course even just a "simple" 27" 1440p monitor is £200 or so anyway so £260 for one with a decent stand and 75Hz Freesync isn't stupid even you never bother with the Freesync for the xbox.
Or you could probably get a pair of 1080p 75Hz Freesync 21.5-24.5 monitors with vesa mounts and a dual monitor arm for about the same price 0 -
