    My average chickens weigh 1.5kg. Where are you getting your huge chickens?

    A local "craft" butcher.

    I hope I wasn't rude and may not have explained myself properly. But even a 1.5kg chicken will take 90 mins. My original advice was for 2 hours. 90 mins uncovered and 30 mins covered. I'm so used to buying decent sized chickens that I forget a lot of people may buy smaller ones. However the "turn to dust" point, I will not accept. :D Even the smallest chicken will survive 2 hours. It may be as dry as sand, but not dust!:D

    I had chipper chips for lunch from the Miami in Dun Laoghaire. It's years since I had chips from there and they were so nice I finished them. I never finish anything.

    Rump steak, boiled potatoes, mixed veg and pepper sauce. Hadn't eaten since breakfast so it went down a real treat!

    steak baked potatoes sauteed onions and mushrooms

    it was too rare the first time I took it out and had to give it another 10 mins and the rest of the food went a bit cold but it was still very nice

    I made a delicious saag aloo....nicest I ever made which meant that part of me was sad that there was no one here to share in the wondrous taste of my culinary glory and part of me was glad so that I didn't have to share it.

    Mashed potatoes, garden peas, cod, all covered in parsley sauce


    Dessert: warm rhubarb crumble with custard :)

    Oh yeah I forgot to mention dessert as it's not a regular thing in this house. Today we had panna cotta with a raspberry coulis.

    Aloo = Potato

    It's like a spinach potato Indian curry. Delish.
