    Just had some oven baked fajitas filled with Sausage, bacon, and chorizo, in a home made tomato sauce. Topped with the remaining tomato sauce, white sauce, and mozzarella.

    First time ever making. Was interesting, but may take some further experimentation. Have a couple portions left over for later in week as well.

    Nursing some aches and pains, so am self-soothing with big glass of iced coffee.

    This is how I would usally do mine, but also with some red onions and fresh chilies, but just fancied something different tonight. Some of the sauce did dry out, resulting in a slightly burnt base, but they were still overall quite soft from the sauce and cheese on the top.

    Yeah I would make enchiladas almost like I make lasagne. For the meat eaters, mince with peppers, chilis and tomato sauce wrapped int he wraps and then cheese sauce poured on top. For me, I do veg, sometimes lentils and do the same.

    I miss having an oven. Dammit.
