How long can eir, Vodafone etc. keep our internet history?

The 2011 Act says two years but I also noted a provision within that said that act doesn't apply to certain internet activities.

Also how would one go about getting all such stored data from them (has anyone tried)?

For retention, it depends on a bunch of different factors, most importantly, data collected must be collected for a specific reason, once the data is no longer required for that purpose, they need to get rid of it.

You do have the right to access the data though, plus the right to erasure, which, particularly if you are no longer a customer might be your best approach if you are worried about it.
