Check out the home study course offered by New York Institute of Photography:

    http://www.nyip.com/products/courses.php

I am half-way through it, and I highly recommend it. They start with the basics like f/stops & shutter speeds, exposure and lighting, and then go on to cover the different aspects of professional photography like portraiture, photojournalism, product photography etc. etc. etc. They include wedding business packages and how to open your own studio. It's fairly expensive, but they do have a monthly payment plan. And you can do the course from anywhere in the world: I know students in Indonesia, Saudi Arabia, Hawai'i, Australia & Canada.

Theres also another online course in Melbourne University but neither the NYIP or the RMIT offer a qualification like the City & Guilds.
