What to do with left-over coconut milk?

    Cooked chicken in it last night (eating remainder tonight) and don't fancy eating coconut milk based meals for the next week.

    Two-thirds of a can - seems a shame to just throw it out. Can it be frozen successfully, does anyone know? Or any other ideas of what to make with it (maybe a dessert?)

    Gosh I'd like to know too. Mind you you can get rid of it all by just putting the whole load of the milk in with your next dish of chicken or turkey, with chutney and raw mushrooms and more veg and just let it simmer for a long time so that it reduces from a lot to - a little. but the reduction would render it very creamy and slightly less potently coconut I find.
