    What do you use?

    I use olive oil for general frying although apparently the goodness of the oil does not stay when heated (the chemical composition changes). To save money I would use sunflower oil.

    But what I'm really curious about is what other types of oil you use.

    I got sesame oil the other day on the advice of a friend. It is very sexy for frying tofu steaks.
    I also have jasmine oil but I don't use it for cooking, and not for salads, it is quite nice on the skin though.

    Anyone have any nice suggestions for cooking oils? (oh yeah, does anyone use lard? :shudder: )

    Olive oil (for pesto, pasta dishes etc)
    Extra Virgin Olive Oil (for salad dressings, drizzling etc)
    Vegetable Oil (for standard cooking)
    Sesame Oil (for chinese cookery)
    Lemon Oil (use it sometimes in my bath, a few drops - very invigorating)

    Peanut oil. Heats to a much higher temperature and holds the quality over a number of fryings.

    Me too, and give the food a nicer flavour IMO.

    Sesame Oil is very strong though...
    It's not typically used for frying, but as a flavouring instead...
    e.g. in a marinade / added to a dish towards the end of cooking.
    Too much can spoil a dish though..

    I use peanut oil for all Chinese cookery..

    I do use solid fat in my deep fat dryer though...
    Less messy, and less potential for disaster!

    Occasionally, when I'm feeling really lazy, and cooking Chinese, I use Sharwoods StirFry oil, which already has Garlic and Ginger flavour suffused thorughout the oil..

    (saves you preparing the Garlic and Ginger)
