Well the one set of book's I would suggest are the Timothy Zahn novels. They are very very good.

Alot of the rest are real hit and miss.Alot of the writers just seem to have the wrong angle on most of the characters.

The tales from Jabba's palace and tales of the bounty hunters are ok as they deal with minor characters so dont piss on what was done in the movies to much.

Aye the Timothy Zarin books tend to be the best of the bunch of SW books, I'd recommend starting of with the Thrawn series.

The Thrawn Trilogy is the best set of books, then the Hand of thrawn duology, but the New Jedi Order series is pretty damn good, currently finished Rebel Dream, waiting for the next one

I've only read the thrawn trilogy by Timothy Zahn (name of the trilogy escapes me, is it Dark Force Rising? Contains Heir to the Empire, Dark Force Rising & The Last Command) the Daala trilogy by Kevin J. Anderson and the first of the two Hand of Thrawn books by Zahn aswell. The first trilogy by Zahn is absolutely excellent, well worth the read. The second trilogy by KJ Anderson is shite, waste of money. The first of the two hand of thrawn books isn't the best, the lack of a 'big-baddie' means it isn't particularily interesting or Star-Warsy. Didn't really leave me wanting to get the second book.

I really liked the Han Solo Trilogy. Gives a good backgound into Solo and explains a few things from the movies, like why Lando might not be happy to see him. They also go right up to the begining of a new hope which is pretty class. The Thrawn trilogy is also fairly legend. But the Solo trilogy was Ace

'Tales From Jabba's Palace' and another book along similar lines about the Bounty Hunters from ESB are very nice reads.

Timothy Zahn's books are the best- he was part of the original writing team, and it shows. Kevin J. Anderson's Jedi Academy trilogy was, imho, diabolical. The Hand of Thrawn duo were both good, and tied up Bantam's involvement nicely. The New Jedi Order series have disappointed me so far, it's starting to get a bit tired. Just my opinion though, I've heard mixed reviews. The X-wing books are too incosistent I find- although the Bounty Hunter trilogy centered around Boba Fett provides some interesting insights into the murky world occupied by bounty-hunters.

Zahn is a good writer, period. The others, generally speaking need to take a course in descriptive writing from Iain M. Banks in my opinion, too little imagination, and not enough panache. Just my opinion of course, but there you have it.
