Job description boundaries

My job description (and yours too I'm sure) says stuff like :

"Role includes (but is not limited to) the following tasks "

"Due to the dynamic nature of the business, responsibilities may change over
    time ..."

I was wondering if this was legal. Isn't there an issue here?

Basically I understand that with such statements my boss can ask me just about anything that go through his head.

How can I know the limits? What can my boss expect me to say NO to without having to go to a "little talk" afterwards?

For your info, I work in a tech support/customer service environment.
The problem is also that if you say "no" to something, your boss can easily imply something like "it is ok,I ll find someone else, those who says YES will have more of a chance if a job opportunity shows up."

Most contracts include something like the above or "The Company reserves the right to transfer you to other comparable duties or roles within the organisation".
    The key is comparable.
If you work as a tech support and your boss tells you do clean the toilets, I'm sure you could refuse as this is not linked to your job title and is not comparable to any of your duties.
I'm not 100% sure on the legal side, but bascially your boss cant tell you to do just "anything that goes through his head".
However, being blackmarked for a promotion is another issue where perhaps you could take legal action if you feel aggrieved.
