Bromelin and papain

    What meat could I put bromelin and papin on to tenderize it? I assume I can't put it on just any meat?

    Maybe some skirt of beef.

    The enzymes only soften the exterior, and skirt is quite a thin cut. If it is for a project, that'd be your best bet. I'm willing to wager you're in Cathal Brugha street :)
