Does anyone know who you can contact about legal issues regarding contracts of employment. The company I work for wants me to take on a lot of new work which as far as I'm concerned is a new job role that is on a different wage level.

Try looking at http://www.entemp.ie/employment/rights/or contacting the Labour Court www.labourcourt.ie - they usually answer any queries and did in the past for me when my old company were trying to screw me out of holidays after sick leave.
