I am looking at double slabbing the Ceilings and non-door walls, mainly to try and reduce sound levels I will be using rockwool as well , and the cost of the extra slabs is basically negligible in terms of the whole house, so is it worth doing? or would I be better trying to source some of that expensive rubber-like mat and fit that inside the wall/ceiling?

Double slabbing is worth doing Definately reduces noise And the insulation'll help greatly as well Make sure it's packed in well to get the best sound proofing Plus this'll contribute to the fire proofing of the house

gypsum do a board called soundbloc which is denser for sound reduction. it's also available at a slightly thicker 15mm.
