i attempted to make some potatoes to go with the chicken that i was cooking in the oven. so i took out a few of them out of the bag and cut them into large bits, mixed them with cajun seasoning (its great) and popped that into a oiled tray (so they dont stick) to bake in the oven.

when they were finished they turned out to be a large version of chips, crispy with seasoning. they were ok, but not what i was used to. what the hell am i doing wrong? was i supposed to add salt for flavour or water? i know this isnt right because they arent the same ones i tasted before i was left on my own. i would consult the cookbook but the only one thats in the kitchen is the naked chef one and im not even gonna attempt that in case i end up saying mad phrases like PUKKA and TUKKA or whatever that loon says while cooking.

or if you have anything tasty to do with chicken cause i got loads of that, about 10 kilos of genuine chicken, breast only!!! smile.gif

    Adnans,

If you just want to make great roast potatoes then par-boil the spuds before you out them in the oven then you'll get a lovely crisp exterior and a soft flourey interior. I usually boil them until the outside of the spud is soft and flakey and then pop them in the pan. Pour some oil over them and salt them and give them a roll around to coat them. Always turn out lovely.

Got it in one. You effectively baked them rather than roasting them, which in the absence of skin will produce large chip-like thingies.

Naked Chef books are actually pretty damn good btw. Just dont come saying PUKKA on here, and youll be okay.
