Best thing is to go as "last minute" as you can. Organise your time off from work for your chosen dates (adding one day at start and finish for flexibility). Then as the time approaches you can check out all the late deals for this period. This is what I hope to do myself. I looked at the Sunway Travel site this morning and they had loads of cheap deals on packages with departures this weekend.

Bag a flight to Amsterdam for €150 from Airlingus.com. Then stay in a campsite just outside the city (Vliegenbos). Think its about €50 for a weeks camping.

I'm looking into Prague myself at the moment.

Which airline are you using and what dates did you go for?

Book direct so much cheaper, I got a flight for 3 of us to Salou for €400 in September and 1 weeks stay in a 3star hotel all inclusive for €650 with www.alpharooms.com
For 1 person you can get just a room for about €200 and a flight for little over €100 depending on what day you fly out, if you can go say Wednesday it'll be much cheaper than a Saturday

went to budapest in june for only €500 for both me and my boyfriend plus an extra 500 odd spending mo. 270 for two return flights and 230 for a large apartment beside the city park. its was cheap over there, we eat like kings in the fanciest resturants for less than €50 each night. one of my fav cities now and i'd defo go back and would even consider living there.

That's what we done last year and got to Crete in early October for €242 for a week, the apartments were basic and clean nothing to write home about but it was grand :)

Went to the algarve. We booked the time off work and then 4 days before holidays scoured aertel.ie which highlights a ramge of late deals. Worked a treat, loads of offers and locations for under 300 and then reviewed the locations on the net to see what they were really like. Most holidays seemed to depart Saturday & Sunday. Then just rang the travel agent. Packages are great, they pick u up from airport, bring u back to airport. Sweet!!

depends what you are looking for -for a package try
    http://www.holiday-special.ie/
you can ring the tour companies about the packages then if you want
www.holidaysonline.ie -same as above but you cant see which company you are going with .
http://www.cheapflights.co.uk/ has a nice link where you select the day you wnat to fly and it shows offers going on that data though havent seen too many bargains there

Sunway and budget dont seem to be included in the above search pages check their own last minute sign up for their newsletters too for budget steintravel etc ,
At this stage of the year I would say you may get a better baragin organising yourself

A lot of the last minute deals are allocate on arrival, which can be a bit crap, so watch out!

Personally I'd go with the suggestions of book flight and hotel by self
